
Ingredients
1 lb. Ground Beef 1/2 lb. Ground Pork or Sausage (optional) 1 Tablespoon Spicy or Stone Ground Mustard 1 teaspoon Sea Salt 1 teaspoon Ground Pepper 1 Large Carrot, Peeled 1 Medium Onion 2 Cloves Garlic 2 Eggs Assorted Veggies (I Like peeled zucchini and mushrooms, but you could use peppers, cabbage, kale, etc.) 1 Piece of Ezekiel Bread (if you can have it, otherwise you can skip this or use another kind of binder like 1/2 cup cooked brown rice or gluten free baking mix or 1/2 almond meal or flour.)
Directions In a food processor chop all veggies, onions, and garlic until fine. Add to a bowl with eggs, meat, seasoning, and chopped/cubed bread, and mix together well with your hands. Transfer to a loaf pan and cook in a 375 degree oven for about 40 minutes, or until the center is cooked.
Serve with your favorite veggies:
Pick your favorite veggie--- favorites are asparagus, broccoli, and green beans.
Pick one or more: shallots, onions, garlic.
Pick a mushroom --crimini, shitake, button.
Wash, cut, and steam veggies for 3-4 minutes until crisp-tender.
In a skillet, heat olive oil or butter over medium heat, add mushrooms and garlic option, saute until 3/4 of the way cooked, then add in the steamed veggies for 1-2 minutes, stirring frequently.
Salt and Serve.
